Sweet Cucumber Salad

A wonderful summertime side dish.

Directions

  1. Slice cucumbers and onions, put in medium bowl.
  2. Boil vinegar and water in medium saucepan.
  3. Pour over cucumbers and onion.
  4. Add Splenda and dill.
  5. Stir, cover and refrigerate at least 1 hour.

our nutritionist, who is helping us with the low GI suggestion, told us to avoid packet sweetners. Her reason was that the non liquid, or dry packet sweetners also contain a bulking agent that changes the GI of the sweetner.
