Stir Fried Vegetables

A quick way to change vegetables up.



  1. Peel eggplant and chop all vegetables.
  2. Put all ingredients in non-stick pan and stir fry until tender. Cover for short periods if needed to speed up cooking process.
  3. Serve alone or over rice.
