Split Pea and Ham Soup

Great soup for a meal.

Ingredients

Directions

  1. Rinse and sort dried peas in a colander.
  2. In a large soup pot, heat olive oil and sauté onion until softened.
  3. Add water, peas, carrots, and cover.
  4. Heat to boiling, and boil rapidly for 30 minutes.
  5. Add ham, and reduce heat and simmer for 30 minutes more, stirring occasionally.
  6. Season with salt and pepper before serving.

This was simple and the results were amazing. Just as good as, if not better, than "name brand" split pea/ham soups. Can't wait to have ham again so I can have leftovers and make this!
