Great soup for a meal.
Ingredients
Directions
- Rinse and sort dried peas in a colander.
- In a large soup pot, heat olive oil and sauté onion until softened.
- Add water, peas, carrots, and cover.
- Heat to boiling, and boil rapidly for 30 minutes.
- Add ham, and reduce heat and simmer for 30 minutes more, stirring occasionally.
- Season with salt and pepper before serving.

This was simple and the results were amazing. Just as good as, if not better, than "name brand" split pea/ham soups. Can't wait to have ham again so I can have leftovers and make this!
