Spinach Patties

Makes one large spinach patty or divide to make smaller ones.

Ingredients

Directions

  1. Drain spinach really well. You can use a potato ricer.
  2. Put all ingredients in a bowl and mix well.
  3. Spray skillet with cooking spray (such as Pam) or olive oil.
  4. Flatten the spinach mix in the pan.
  5. Cook for 8-10 minutes on medium heat.
  6. If needed, garnish with low fat ranch dressing.

I made this in the microwave oven. I cook the eggs for about 1-2 minutes first then I add my spinach and cook for another 1-2 minutes. When it is almost done I sprinkle cheese on top and let it finish cooking (maybe another minute).

Was pretty good. I did dip it in a little bit of low fat ranch dressing. I think that next time I will put a little garlic salt in it. Maybe even some tomatoes or salsa. Yum.

sounds like it has potential.. i'm going to sautee the spinich with garlic and a little olive oil then mix it with the egg.. cook it then sprinkle with either a little feta or locatelli cheese.. mmm! thanks :)

This sounds delicious! I'm going to try it tomorrow, but substituting mustard greens for the spinach. Gotta roll with what's in the crisper!

I use to saute spinich quite often and hubby loves it. I would garlic to this! sounds like a great side dish

I just made this for lunch. Its kind of boring and a bit bland but this has serious potential! I will make this again this weekend and add reduced fat swiss instead of Parmesan and add some mushrooms, garlic and onion. I think then it would be so yummy! It is very quick and easy to make, I just think it would be much better with a few tweaks. Thanks for the great idea!
