Spinach Mushroom Bacon Salad

A quick side dish.

Ingredients

Directions

  1. Cook bacon, remove bacon from pan and let cool. Chop when cool. Reserve grease.
  2. Cook sliced mushrooms in bacon grease until soft.
  3. Remove mushrooms from heat, add Dijon mustard, vinegar, Splenda and oil.
  4. Toss bacon, spinach, onion with mushroom mixture.
