Spinach Chillaquillas

When you crave the taste of an enchilada or Mexican style chillaquillas, this will do the trick.

Ingredients

Directions

  1. Heat the pan with olive oil or butter.
  2. Sauté onions till tender, then add spinach and sauté until soggy.
  3. Add enchilada sauce or pato tomato sauce depending on your taste.
  4. Scramble in the 2 egg whites until done.
  5. Salt and pepper to taste.
  6. Note: if permitted by your diet you can even add cheese.
