Great 5 point breakfast for a Sunday morning.
Ingredients
Directions
- Heat skillet with non-stick spray, beat eggs and pepper to taste.
- When pan is hot, cook eggs and put spinach on top of eggs. Place cover on top for fluffyness.
- When underside is done, flip. Cook until cooked through and the spinach is soft.
- Plate eggs, and sprinkle feta (low fat if possible) on top.
- Optional, have 100 calorie English muffin for an extra point - make an egg sandwich out of it.

they even make fat free feta cheese. the best deal you can get is at Sam's Club. They have big tubs of Feta cheese (low fat) for about the same cost as a small package at your regular grocery store.
