Spicy Chicken Tortilla Casserole

Spicy Tabasco chicken and diced tomatoes baked with tortilla chips.

Ingredients

Directions

  1. Arrange tortilla chips in a 13x9" baking dish and sprinkle with chicken.
  2. Heat oil in a large saucepan over medium-high heat; add onion and cook until tender and lightly browned, about 7 minutes.
  3. Stir in garlic and cook 1 minute.
  4. Add tomatoes, broth, Tabasco chipotle sauce, and salt.
  5. Bring to a boil, reduce heat, and simmer 5 minutes.
  6. Stir in cilantro and pour evenly over chips.
  7. Sprinkle with cheese and bake in a 400 °F (200 °C) oven until lightly browned and bubbly, about 15 minutes.
  8. Serve immediately.
