Spanish Chicken Skillet

Red pepper flakes and paprika give this gorgeous chicken dish a little kick.

Ingredients

Directions

  1. Mix flour, salt and all of the spices except the red pepper in small bowl.
  2. Sprinkle chicken with 2 tablespoons of the seasoned flour.
  3. Cook chicken in hot oil in large skillet on medium-high heat 3 minutes per side or until browned. Remove from skillet.
  4. Add bell pepper and onion; cook and stir 5 minutes or until tender.
  5. Stir in tomatoes, broth and remaining seasoned flour. Bring to boil, stirring frequently.
  6. Stir in red pepper to taste if desired. Return chicken to skillet.
  7. Reduce heat to low; cover and simmer 10 minutes or until chicken is cooked through.
  8. Serve with rice or pasta.

This is delicious! Even better if you shred the chicken. We checked the calorie count as it seemed low and came up with closer to 300. Will definitelyy make again!

Great dish. I cooked this in my non-stick electric skillet and omitted the olice oil. I also substitutes Rotel for the plain tomatoes since we like things spicey. Served over cilantro-lime brown rice. Yum!

This was fantastic. Used a can of Rotel with Chiles in place of the diced tomatoes. Gave it a little extra kick.

So flavorful and definitely has a kick!! I served mine in a bowl over a baked potato and added a just pinch of shredded mozzarella cheese, for the heck of it.
