Roasted Asparagus with Red Potatoes and Onion

Easy, delicious and healthy veggies make a lovely side dish.

Ingredients

Directions

  1. Chop ends off of asparagus.
  2. Mix all vegetables in little olive oil and balsamic vinegar (optional).
  3. Put in a 8x8" or 9x13" baking dish, depending on how many vegetables you have.
  4. Bake in 450 °F (220 °C) oven for about 30 minutes until done.
  5. Note: you can use any assortment of vegetables you like, with or without potatoes.

I hadnt had Aspara gus since i was a child because i didnt like it then. This was the first recipe I'd tried as an adult and was so very impressed. The balsamic viniger gives it a good sweetness. when i made it though i didnt use the red onion, i used organic minced garlic instead, so good.
