Raspberry Cheesecake Squares

These low carb cheesecake squares are very good.

Ingredients

Directions

  1. Sprinkle gelatin into boiling water.
  2. Stir until well dissolved.
  3. In bowl, beat cream cheese until very creamy.
  4. With mixer running, add geltin,1/4 cup at a time.
  5. Mix until thoroughly combined.
  6. Pour into 8x8" pan, refrigerate until firm, about 2 hours.
  7. Cut into squares and serve.

I don't use a blender. It gives it a marbled look. Love lemon, lime and orange sugar free jello flavors. I've put this in individual serving containers and in a pie crust for family. They love it

Looks yummy! The best part, I think it sounds like you would be satisfied with one, which is generally what gets people in trouble! Or maybe, that's just me!

COnsistencey was a little strange, not a crowd pleaser. I thought they were just ok. Made them with cherry instead of rasberry

It wasn't my favorite plain, but I did add some sliced strawberries and a small amount of cool whip and that made a good light snack.

I don't understand the amount of cream cheese,the recipe say 2 3/4 packages of cream cheese, how big are the packages?
