Potato & Carrot Soup

A quick and easy vegetable soup that pairs beautifully with warm crusty bread.

Ingredients

Directions

  1. Cut up the onion and fry in the oil until brown.
  2. Add the water and stock cubes. Add the potatoes and carrots and mix.
  3. Bring to the boil and simmer for 30 minutes. When vegetables are soft liquidize.
  4. Serve with sprinkle of mixed herbs on top.

I did add garlic and celery to this recipe. It is delicious! I actually had a leftover bowl for a snack this morning and it may be better reheated!
