Orange Cranberry Muffin

A healthy breakfast muffin.

Ingredients

Directions

  1. Combine flour, cranberries, baking powder, baking soda, cinnamon, salt, and nutmeg. Whisk together.
  2. In a separate bowl combine brown sugar, oil, juice, orange peel and eggs. Whisk together.
  3. Combine both mixtures together. Mix well.
  4. Bake at 375 °F (190 °C) for 17 minutes.

The sweet orange flavor just pops out with every mouthful. I added 1/2 cup walnut pieces to the flour mixture togive it a nutty taste. I also made a glaze with confectioner's sugar, orange juice and grated orange peel to pour over them.
This is a great recipe! I really liked it much better than any other cranberry orange muffin that I have ever tasted. The only thing I did different was to use fresh, chopped cranberries rather than dried because that's what I had on hand. Everything else I did exactly according to the recipe. I generously buttered the muffin cups and it made a nice, buttery crust around each muffin. I think this will be my go-to recipe for cranberry muffins!
