Oatmeal Muffins

Taste like regular muffins and are yummy.



  1. Preheat oven to 350 °F (175 °C).
  2. Spray muffin pan with non stick spray or line with cupcake liners.
  3. Mix oatmeal, salt, baking powder, cinnamon.
  4. Add remaining ingredients until it resembles slightly runny oatmeal.
  5. Fill muffin cups 3/4 full.
  6. Bake 15-20 minutes until golden brown.

Something to satisfy for Phase 1 of Fat Smash. Easy and quick too! It saved me one rainy afternoon.
Throw in a little flaxseed or bran to bump up the fiber and it would be a good choice for Diet is a Dirty Word.
