Oatmeal Banana Muffins

Absolutely delicious muffins.

Ingredients

Directions

  1. Preheat oven to 350 °F (175 °C).
  2. Spray muffin pan with non-stick spray or line with cupcake liners.
  3. Mix oatmeal, salt, baking powder, cinnamon.
  4. Add remaining ingredients until it resembles slightly runny oatmeal.
  5. Fill muffin cups 3/4 full.
  6. Bake 15-20 minutes until golden brown.
  7. Note: this is a modification of SourSugarBaby07's Oatmeal Muffins recipe; I added a mashed banana to the recipe and it increased the flavor even more!

This muffin was ok. I would add more applesauce and bannana for more flavor. But in all it was very filling for a healty breakfast.

The flavor is good, the texture is dense, but still very good. Filling and makes a good breakfast. I eat 2 with 1 cup skim milk and stay satisfied until 10:30 when I have my morning snack.

not good for phase 1 because of the oatmeal, bannana and applesauce, perfect for phase 2

Not ok for Phase 1 but sounds like it would be really nice for Phase 2...although you should be careful of the applesauce! Make sure it's no sugar added!
