Mozzarella Meat Loaf

This low carb meat loaf is delicious.

Ingredients

Directions

  1. Heat oven to 350 °F (175 °C).
  2. Mix all ingredients and put in a 8x8" pan. (No need to make into a roll.)
  3. Bake for 1 hour uncovered then remove and let stand 10 minutes.
  4. Note: you can use sausage instead of beef and try and use salt free tomato sauce.

This was very good. I added a little tomato sauce on top so it wouldn't be so dry.

I don't even like meatloaf and this was so yummy! I left out the pork rinds (gross) and added parmesan cheese as suggested by other reviewers. I substituted chopped fennel and chopped chives for the red onion, and used fresh basil instead of parsley. I doubled the recipe and used a disposable loaf pan to freeze the second loaf for some very busy night :)

I made this recipe omitting the pork rinds and it was delicious. My BF said he liked it better than my old recipe (pre-Adkins), using catsup & crackers. Will be making this regularly. Thanks for sharing Shelly. Shelly, I've made this meatloaf 3 times already and the last time I followed your ingredients exactly and it was so good and held together better than omitting the pork rinds. It's our favorite meatloaf. Even though I'm doing Atkins the calories are still killer, but so good.

I actualyy have a stuffed meatloaf and it uses turkey. We love it and I think it is one of the best meatloafs I have had

I haven't tried this yet but I am wondering if it would lower the fat some more if I substitute ground turkey instead of the beef.

This diet is very high in fat for South Beach dieters; however, if you use mozzarella cheese made with part-skim milk and use dry bread crumbs instead of pork rinds, it lowers the fat to 20g and ups the carbs to 23g.
