Mock Potato Soup

If you're missing potato soup, try this out.

Ingredients

Directions

  1. Separate cauliflower and cut into small pieces (you can use frozen cauliflower as well).
  2. Boil with chopped onion in chicken broth until tender.
  3. Place approximately 2 cups of cooked cauliflower in food processor with 1/4 cup of chicken broth.
  4. Add butter and cream and pulse until creamy.
  5. Combine remainder of cauliflower with cooked bacon, salt, pepper and shredded cheddar cheese.
  6. Mix with pulsed mixture.
  7. Note: you can add sour cream and chives if desired!

Wow, I have to give this a 5 stars this is fantastic. It definitely is just like it. Next time I will leave the cheese out however.

I made this and served it to coworkers who would have never eaten cauliflower. They did not realize it was not potato and thought it tasted great. Remember this is for Atkins not other diets so please keep your negative comments to yourself, non-Atkins dieters. Our cholesterol levels are great, thank you for your concern.

I loved this soup! My husband and 4 year old son are very picky eaters and they loved it also! I wasn't about to tell them their cheesy "potato" soup was actually califlower instead! Thank you for sharing this recipe!

This recipe alone is a great reason to be on Atkins! I love this soup and I love this way of eating. I cooked frozen cali in veg broth and added a head of garlic and the onions while boiling. I didn't use all the cheese (maybe only 1/2 cup) & I used Nueskes peppered bacon (which I sprinkled on top. This is so delish! Would be good with bit of broccoli I bet, too! Did I mention it's easy to make?

This recipe fooled EVERYONE in the family at dinner last night! It tastes divine! I did make a few modifications to it: (1) I used one small jar of real bacon bits in lieu of strip bacon--sped up the process! (2) I am not fond of onions, and reduced it to 1/8 cup (3) Used 2/3 cup of heavy whipping cream (4) I used 4 cups instead of 3 of reduced sodium chicken broth. It cooked down too quickly! It was still a thick soup! (5) I left out the salt for Induction! It didn't need it anyway. (There was some in bacon bits) Even the pickiest eater at the table did not know it wasn't potato! Way to go! Love this recipe!

I am very worried this recipe is filling your arteries with fat. Have you had your cholesterol checked lately? It should be no more than 150 to ward off a heart attack in the future...Good Luck. Peace be with you and your dieting...
