Mixed Vegetable Casserole

A cheesy and crunchy vegetable casserole.

Directions

  1. Mix all ingredients, except crackers, well. Place in shallow baking dish.
  2. Top with crushed cheese crackers. Drizzle butter on top.
  3. Bake at 350 °F (175 °C) for 30 minutes or until brown.

This recipe would not be allowable for atkins induction b/c of the cheese cracker and the mixed veggies (frozen) which typically include diced carrots and corn (high in carbs). This recipe would be workable if you using frozen string beans or brocolli and leaving out the crackers entirely.
