Mini Egg Sausage Quiches

A dozen of the tastiest breakfast muffins you could imagine.

Ingredients

Directions

  1. Preheat oven to 375 °F (190 °C).
  2. Spray non-stick spray into muffin pan cups.
  3. Cook and crumble the sausage according to the product's directions.
  4. Drain and dispense into each of the muffin cups. Top with cheese.
  5. Mix eggs and spices together. Ladle egg mixture into each of the cups until they are 3/4 of the way full.
  6. Bake in the oven for 20-27 minutes, or until eggs are set and the top of the muffins are golden brown.
  7. Note: great treat for South Beachers.

i modified the recipe, ading in italian seasoning, and using chopped up roast beef, and turkey!! they turned out great!!!

I made these for a breakfast potluck so I would have legal food to eat and they were such a hit I had to hurry up and get one before they were gone! I used Jimmy Deans spicy bulk sausage and they were delicious.

Great taste and convenience with a few added spices. Also, using FULL FAT everything since that really works for Atkins!

I loved these! I used hot sausage and added a little hot sauce. Really kicked it up a bit. So convenient and transportable.
