Mashed Cauliflower

Lovely steamed cauliflower mashed with cheese and garlic.

Ingredients

Directions

  1. Place the cauliflower in a steamer and steam to desired tenderness.
  2. In a bowl, mash the cauliflower with garlic, chicken broth and parmesan cheese, all to taste.
  3. Serve warm.

I like to use almond milk instead of chicken broth and serve with a dollop of low fat sour cream.

This looks absolutely scrummy but can someone help? What is chicken broth?...is that a soup? (1oz of chicken soup?) or would a chicken stock cube suffice? (made up with water, of course)...or is it something else? Thanks for any guidance.

Made this but used fat free cream cheese instead of the parmesean and it was very hard for me to tell the difference between this and mashed potatoes. Excellent substitution!
