Lentil Vegetable Stew

A hearty veggie stew with lentils.

Ingredients

Directions

  1. Put all vegetables in a large pot. (Remember you will need to add lentils later so make sure it is large enough.)
  2. Add enough water to cover the vegetables, and season with salt and any other spices you enjoy like onion powder, garlic powder or cayenne pepper.
  3. Cook the vegetables until they are tender and add the lentils.
  4. It should only take about 8-10 minutes of simmering to soften the lentils and cook all the flavors together.
  5. Make sure to add water as it cooks out, or you could scorch your vegetables.
