Lemon Poppy Seed Muffins

A tasty lemon muffin, perfect as a snack.

Ingredients

Directions

  1. In a large bowl, mix dry ingredients.
  2. In a small bowl mix the zest, egg, butter and soy milk together until combined.
  3. Mix with dry ingredients and stir just until combined, trying not to over stir.
  4. Bake at 350 °F (175 °C) for 20 minutes.
  5. Let cool in the pan for 2 minutes before taking them out.
  6. Note: sugar can be used instead of sweetener.
