Huevos Rancheros (No Tortilla)
This is a great diet version of this yummy Mexican breakfast.
Ingredients
Directions
- Separate yolks from egg whites.
- Fry egg whites in a small sauce pan using pan spray on medium heat.
- Once the top of the egg begins to firm, flip over and fry the other side about 3 minutes.
- Once egg is cooked and slightly golden on both sides remove to a plate.
- Place black beans in same pan and heat.
- Place beans on egg tortilla.
- Place salsa on top of beans and top with fresh avocado or guacamole.
- Note: avocado is substituted for oil which brings down the calories.
