Organic baby spinach with fresh olive oil and garlic.
Ingredients
Directions
- Use a skillet or deep stock pot.
- Add spinach, use more than you think as it really shrinks.
- Add olive oil.
- Add minced garlic, let it cook for 1 minute.
- Let spinach wilt down but don't let it get dark, the brighter the better - lots of vitamins!

Very low in carbs. :) This one is great. I add some low sodium soy sauce to it which makes it even better. :) MMMMM mmmmmmm!!

this is great for all phases of atkins. i use a lot more spinach because it does shrink down. i really like spinach when it's cooked and this is a tasty and easy way to add veggies to a nice chicken or steak dinner.
