Garlic and Mustard Marinated Chicken

Low carb tasty chicken using a really simple marinade.

Ingredients

Directions

  1. Combine garlic, mustard and vinegar with olive oil in a container with a tight fitting lid. Shake to combine all ingredients.
  2. Place chicken pieces in a bowl and pour marinade over everything. Cover and chill over night.
  3. Pre-heat oven to 350 °F (175 °C).
  4. Place chicken on a baking sheet and bake for 45 minutes, turning once.

I used half of the oil, mustard, and vinegar and kept the same amount of garlic and it was more than enough to marinate a lb of boneless chicken thighs in a large ziplock bag. Very tasty!

I grilled instead of baked it and it was wonderful. I used some of the same ingredients to make a sauce for it as well.

We did not think this had any flavor...smelled wondeful but was very dry.

OK, I made this recipe allowing myself 4 oz of chicken. I marinated the chicken for a whole day. It is absolutely delicious, and....so very easy. Still would like to know what a "unit" means in ounces. Am keeping this one in my recipe cookbook.

One of my boyfriend's favourites! To change the taste just slightly, I substitute whatever vinegar I grab first - apple cider, balsamic or rice wine.
