Garden Vegetable Soup

Use any fat-free broth and substitute any vegetable you don't like for a vegetable you do like.



  1. In a large saucepan sprayed with nonstick cooking spray, sauté the 2/3 cup sliced carrot, onion, and garlic over low heat until softened, about 5 minutes.
  2. Add fat-free broth (beef, chicken, or vegetable), cabbage, beans, tomato paste, basil, oregano, and salt; bring to a boil.
  3. Lower heat and simmer, covered, about 15 minutes or until beans are tender.
  4. Stir in zucchini and heat 3-4 minutes. Serve hot.
  5. Makes four 1 cup servings.

It's good but when I made this recipe Iended up with 6- 1C serving.

VERY tastey and satisfactory with a low calorie count. Definately one of my favorites.

no carrots aloud on phase 1

You can have greenbeans on phase one, just leave out the carrots and add some parsely!
this sounds YUMMY...I had to add some veggies and remove some...but great base idea thanks!!!

.67 cups is 2/3 cup. I don't know why they didn't use standard meas. I don't think this recipe fits into most of the diets, other than it is low fat, and it will prob. fill you up.

for a kick add diced jalapeno pepper. omit carrot phase one. it works!!!!!!!!! yum.
if you don't know the measurement, how can you follow a recipe ? What is .67 cups of carrots ? Other than that, the soup sound great.
