French Crepes

Traditional French crepes with a few healthier changes.

  1. Melt and cool margarine.
  2. Measure flour, sugar, baking powder, and salt into a bowl. Stir in remaining ingredients.
  3. Beat until smooth.
  4. For each crepe, lightly grease an 8" skillet and heat until hot.
  5. Pour 1/4 cup of batter into skillet, and immediately rotate pan until batter covers bottom.
  6. Cook until light brown, turn and brown other side.
  7. If desired, spread with applesauce, jams, jellies, or other condiments. Also, if desired, sprinkle with powdered sugar.

I added a tsp of vanilla, and filled them with fresh strawberries! Topped off w/ a syrup I made from reduced-suger Apricot preserves, and a little water! Who says you can't diet AND eat what you like?

These are fantastic! How many crepes are in 1 serving, just out of curiosity? I put the majority of it in the fridge for later. :)
