Curry Roasted Cauliflower

Curry spiced roasted cauliflower that's great alone or as part of an Indian themed dinner.

Directions

  1. Pre-heat the oven to 425 °F (210 °C).
  2. Place the cauliflower florets in a large bowl. Drizzle with the olive oil, sprinkle with the curry powder and salt, and toss together until the florets are evenly coated.
  3. Pour the cauliflower and any oil remaining in the bowl into a roasting pan or large baking dish, and spread the florets into a single layer.
  4. Place the cauliflower in the preheated oven and roast, stirring occasionally, until cauliflower is tender and begins to caramelize, about 30 to 35 minutes.

I was so looking forward to this since I love curry. I followed the recipe (My oven runs hot so I knocked it down to 370) I cooked 30 minutes but it came out too dry. What am I doing wrong? Hmmm.

I have made this twice now, I used frozen cauliflower and broccoli and didn't use the olive oil or salt. And I fried it in baking spray as the oven was in use.

Yummy! I love it! (BTW - it's good fat. Plus, if you wanted to, you could lower the fat content by using olive oil cooking spray instead of the oil. I'm okay with it the way it is though.) :-)

This is simple and delicious! The recipe didn't specify, but I used 1/2 tsp curry powder. Also, I might scale back the oil to 2tbsp as there was quite a bit sitting on the bottom of the pan.
