Curried Wheat Salad

High in fiber with lots of flavor.

Ingredients

Directions

  1. Bring the broth to a boil.
  2. Add the bulgur, and sprinkle with salt, pepper, and curry powder.
  3. Cover and cook for 5 minutes, stir in peas, carrots, and cabbage (both chopped fine).
  4. Cook an additional 3 minutes or until all the liquid is absorbed.
  5. Fluff with a fork.

Be sure to get the quick cooking bulgur. One serving is 3 points. I serve it with the lettuce wraps, using up the extra cabbage and carrot from that recipe (and to tie the flavors together).
