Vegetarian, low carb, crustless spinach feta quiche.

Directions

  1. Cook the frozen spinach and drain it.
  2. Beat the egg and add in all other ingredients.
  3. Grease a small ramekin (4.5" to 5.5" wide) and pour ingredients in to it.
  4. Cook at 375 °F (190 °C) for 35 minutes.
