Creamy Smashed Potatoes

So delicious and creamy minus the butter and milk.

Ingredients

Directions

  1. Peel and cut potatoes into 1 in cubes.
  2. Toss into a pot, add water to boil.
  3. Add peeled garlic cloves into water and boil along with potatoes.
  4. Once potatoes are fork tender, drain along with garlic and place in a bowl to mix.
  5. Using a hand mixer (or however you prefer to mash potatoes) break apart potatoes and garlic until somewhat smooth.
  6. Add sour cream, salt and pepper to taste.

Calories per serving needs clarification. Salt not needed or at least cut down. The recipe is delicious.

maybe it was supposed to be 1 tsp., a Tbsp. would be a lot for three potatoes.

What is a serving size? Half cup,full cup?

Haven't tried, just reading and believe the high sodium is due to the 1 Tb of salt to boil the potatoes. Just how much of that 1 Tb should actually be counted? You're throwing a lot of salt away with the water.

this is ok if it is all you eat all day the sodium is crazy high calories for me are a little high for a side dish.
