Cream Cheese and Bacon Jalepeno Poppers
An even tempered low carb snack that's low in calories too.
Ingredients
Directions
- Cut the chili peppers in half lengthwise; scrape out seeds and membranes.
- Fill each half with cream cheese, but do not mound it. Four ounces should be just about the right amount for 8 average size jalapeno halves. If you have extra large peppers, make sure you have a full 8 ounces of cream cheese on hand.
- Wrap each with 1/2 slice raw bacon, making sure to start with the end on the bottom of the pepper. Stretch the bacon slightly to make it go all the way around each pepper once, then tuck ends underneath.
- Place cream cheese side up on foil-lined baking sheet. These can be assembled and chilled until just before baking and serving.
- Bake at 375° F (190° C) for 20-25 minutes.
- If bacon isn't quite done, broil a few more minutes to brown.

These are pretty tasty, but took longer to cook than the recipe calls for. However, I will be making these again, with lobster meat mixed in to the cream cheese. It should taste similar to the lobster poppers I used to get at the Red Lobster restaurant. And yes, I do think this recipe is good for Atkins, Induction Phase; if it wasn't I wouldn't have made it in the first place.

Pretty good. We subbed in low fat cream cheese and turkey bacon and it was pretty darn tasty.

I looooved this recipe! Turkey bacon is a good substitute for regular bacon and you can't tell a difference in flavor from the fat-free cream cheese! Awesome appetizer recipe!
