Coconut Bread

A tasty coconut bread for those on a paleo diet.

Directions

  1. Preheat oven to 350 °F (175 °C).
  2. Blend eggs, oil, honey, and salt together. Set aside.
  3. In a separate bowl, combine coconut flour with baking powder. Whisk this into the egg batter thoroughly, until there are no lumps.
  4. Pour into greased 9x5x3" or smaller loaf pan and bake for 40 minutes.
  5. Remove from pan and cool on rack.

The Servings size is a bit small, but they taste wonderful! I actually subtracted a small ammount of the coconut flour and replaced it with almond flour meal and they came out tasting just like cornbread.

I made it and maybe I didn't put it in the right pan (I used 8x8 glass baking dish) but I got about 9 servings, which is 214 calories each square! Hm. Maybe something is off. However, I did like the flavor.

Is 1859 calories for the entire recipe? It says it serves 24. Nutrition facts to the right say 82 calories per serving.
