Chunky Vegetable Hash

This hash will get your breakfast started right.

Directions

  1. In a large skillet, heat oil over medium-high heat.
  2. Add onion, thyme, and paprika, reduce heat to medium-low, and cook, stirring occasionally, 7 minutes, or until onion is softened.
  3. Stir in salt, bell pepper, mushrooms, zucchini, and garlic.
  4. Cover and cook, stirring occasionally, 4 minutes longer.
  5. Remove from the heat and serve hash by itself or with a poached egg.
