Chipotle Chicken Chowder

Very tasty chipotle flavored chowder.

Ingredients

Directions

  1. Heat oil in a large saucepan over medium heat.
  2. Add sweet pepper, chopped onion, and cumin; cook for 3 minutes, stirring occasionally.
  3. Carefully add chicken broth, water, and chipotle peppers.
  4. Bring to boiling; reduce heat. Simmer, covered, about 8 minutes. Stir in chicken.
  5. Gradually stir about 1/3 cup of the milk into cornstarch in a small bowl; stir into broth mixture in saucepan.
  6. Add the remaining milk. Cook and stir over medium heat until thickened and bubbly. Cook and stir for 2 minutes more.
  7. Garnish with sliced green onions, if desired.

I scaled up some of the ingredients, hole green pepper, red pepper, onion. two chicken breast (because Costco packages them that way). 16 ounces of chicken broth, 8 ounces of water. I put 4 chipotle peppers in adobo sauce, next time going to add entire 7 ounce can. Add salt to taste. Very tasty to begin with just need more of it. Made it a couple of times now.

Accidently added the whole container of chicken broth (32 oz.). Actually with the extra chicken broth, it added to the amount for very few calories and it tasted great. This recipe is a keeper.

This was AMAZING! My husband took the leftovers for lunch the next day and that says a lot.
