Chili Con Carne with Red Beans

Rich and heart healthy chili con carne with lean ground beef that's suitable for all meals.

Ingredients

Directions

  1. In a large pot with a heavy bottom, brown the 95% lean ground beef, remove from pan and set aside on paper towels to drain.
  2. Add olive oil to the pan, then add all vegetables, except the canned tomatoes, sweat until crisp tender.
  3. Add seasonings, stir and add wine, cook for two minutes, add the remaining ingredients and bring to a simmer.
  4. Let cook over low heat for at least an hour, or until the vegetables are fully softened.
  5. Adjust seasonings to taste.
