Chicken with Sun Dried Tomato and Artichoke Sauce
A decadent creamy chicken dish that everyone will love.
Ingredients
Directions
- Spray a non-stick pan with cooking spray.
- Add salt and pepper to both sides of chicken. Sear chicken on both sides and turn down heat.
- Add butter then the finely chopped shallots, garlic, and sun dried tomatoes (can have a coarser chop).
- Cook for a few minutes until lightly brown (be careful not to burn). Deglaze pan with the wine.
- Add chicken broth and heavy cream.
- Simmer for a few minutes. Sauce will thicken slightly. Serve with veggies, over pasta, or with rice.

I am a type one diabetic and stay away from alcohol so I substituted with more chicken stock. I didn't have any chicken so I used turkey patties as a substitute and it was yummy.

Good for Atkins or any low carb except for 32 oz white wine to deglaze??????
