Chicken Quesadillas

These flavorful quesadillas are fast, simple, and healthy.

Ingredients

Directions

  1. Combine the cooked chicken, lettuce, and salsa in a bowl; divide among 3 of the tortillas.
  2. Sprinkle with the cheese; top with the 3 remaining tortillas.
  3. Spray a large non-stick skillet with non-stick cooking spray or olive oil.
  4. Cook the quesadillas, one at a time, until lightly browned, 3 minutes on each side; turn carefully with a wide spatula.

I don't add the lettuce until after the quesadilla is cooked. I've gotten creative with this and used monterey jack cheese with bbq sauce instead of salsa. Yummy!
