Chicken Lettuce Wraps

Great alternative for rotisserie chicken that you see in the supermarket.

Ingredients

Directions

  1. Wash and dry lettuce leaves then set aside.
  2. Take the rotisserie chicken breast and pull apart, making sure to discard the skin.
  3. Take a leaf of lettuce and place a slice of fat free Swiss and two cucumber slices on top. Next, layer a small handful (approximately 1 oz) of chicken on top.
  4. Dress with spicy mustard and wrap leaf into a tight bundle. Can exchange spicy mustard for yellow, honey mustard or fat free mayonnaise.
