Chicken Cordon Bleu

A delightfully easy flavorful chicken dish that will surely become a favorite.

Ingredients

Directions

  1. Pound chicken breasts to about 1/3" thick.
  2. Place ham on breast then 1/2 oz of bleu or swiss cheese.
  3. Roll up; securing with a toothpick.
  4. Dip each breast-roll into a mixture of the melted butter and beaten egg.
  5. Roll in parmesan cheese and place in buttered baking dish.
  6. Bake at 350 °F (175 °C) for 30 to 35 minutes or until browned and tender.

I only eat half of one due to it being higher in calories - but yummy!!! I also add a reduced fat cheese to reduce the calories.

I made this recipe tonight and found it to be easy to make and was dee-lish. The whole family enjoyed it. I will definitely make it again.

I made this doing a little substitutions of my own. I used olive oil instead of the melted butter and eggs, sprinkled a few bread crumbs on there, and I put a little bit of dijon mustard on for some extra flavor. I had problems getting the chicken thin enough to roll easily and it kind of made a mess, but otherwise was pretty good.

So I tried this recipe and I think it could be really good, but my chicken was no where near done in 35 min. I had to leave it in the oven for at least an hour. It was really dry (over cooked I'm sure) by the time I took it out but there were still pieces of chicken that were pink... Not quite sure what went wrong there.

Huge hit tonight for guests where the words lo carb were not mentioned. The only part of dinner not lo carb was the rice and the Klondike Heath bars that only my hubby ate....Super recipe!

I made this with boneless skinless thighs instead of chicken breast. Very tasty - even out kids loved it !
