Cheesy Beef Bake

A quick toss-together and bake meal that's great for hungry families.

Ingredients

Directions

  1. Preheat oven to 350 °F (175 °C).
  2. Coat bottom of an 8 x 11" baking dish with olive oil spray. Set aside.
  3. Brown ground beef. Drain well.
  4. Add chopped red bell pepper and chopped spinach to ground beef and mix together.
  5. Pour ground beef mixture in to baking dish. Use a spatula or wooden spoon to evenly distribute the mixture.
  6. Sprinkle 1 cup (half a bag) of the shredded cheddar cheese over the mixture.
  7. In a separate bowl, scramble together 5 eggs. Add salt and pepper to taste. Pour eggs over beef mixture.
  8. Bake at 350 °F for 15-20 minutes. Remove from oven and let sit for 5 minutes before serving. Cut into slices or squares.

I thought it would need more flavor so I added chopped green onions from my garden and some chopped mushrooms. Still pretty dense but tasty. Should have cut into 6 pieces. Serving was really large

Sounds good try the recipe. But will Try vegetable iit up. Love carrots ground meat also loves carrots. Green beans. Possible endless

I made this with frozen creamed spinach and no bell pepper. The first night it was alright, the second night after the flavors came together it was WOW!...my 4 year old ate all of what was on her plate including the spinach.

4/1/16 I made this tonight for me and my (picky) husband and he loved it!!! I loved it too! I changed it a little bit, I didn't have spinach so I just use other veggies. I'm doing low carb so this was really a good recipe for that. It's like a crustless quiche. Very good! You could eat this for breakfast too!

Very easy to prepare. Tried it with ground turkey. Quite tasty but would suggest adding onion if turkey is used.

use liquid eggs, and its going to be lower in calories, or skip the eggs. Use a lower calorie cheese with less sodium, I don't like salt and I don't want to eat something with over 300 mg of salt in it.
