Cheese & Artichoke Stuffed Chicken Breasts

Chicken breast stuffed with artichoke hearts and goat cheese.

Ingredients

Directions

  1. Pre-heat oven to 375 °F (190 °C).
  2. Flatten chicken breast to 1/8".
  3. In food processor, combine artichoke hearts and goat cheese. Combine until creamy.
  4. Split between two breasts. Spoon onto each breast in the middle, folding breast over mixture.
  5. Bake for 15 to 20 minutes depending on size of breast.

It was great! I ended up substituting feta cheese for goat cheese and added some kalamata olives into the food processor for a little more flavor. You may want to add a little sauce of some sort, I just added some garlic season on the chicken before stuffing it! It was so good!

yum! I also added chopped green onions and red peppers--delicious!
Made this the other night. It was good, but next time I make it I will put bacon in it too. It was a little bland, but I think the bacon will be great.
