Black Bean and Corn Salad

A high fiber salad that lets you get multiple veggie servings in one meal.

Ingredients

Directions

  1. In a bowl, combine beans, red pepper, corn, celery, onions and dry parsley.
  2. To mix dressing: whisk together the vinegar, mustard, sweetener, salt and pepper. Whisk in oil and water.
  3. Pour over salad and mix well.
  4. Cover and refrigerate.

Really good and filling! My husband didn't think he'd like it (says he doesn't like black beans), but I made him try it and he really likes it. I used red-wine vinegar, but I'm curious to know if other vinegars would make any difference. Also, I think I'll cut back on the mustard in the dressing a bit next time. Will definitely make this again!

This is excellent! Just curious the measurement on the serving size? I am thinking it is either 1/4 cup or 1/2 cup. If any one knows, it would be much appreciated.

Very good flavor. I will probably cut back on the oil next time I make it.
