Beet Feta Salad

Beets and feta pair beautifully to create a wonderful creamy delicious salad.

Directions

  1. Boil beets until soft, then peel.
  2. Slice peeled beets, Add olive oil and vinegar.
  3. Mix in feta and mint.
  4. Cool and serve.

Delicious! I added a little red onion thinly sliced, and some freshly ground pepper. Substituted Apple Cider Vinegar. Will definitely add this to my favorite dishes! Thank you.

Tasty recipe. I added it with some rotisserie chicken breast on a whole wheat pita for a nice lunch option.
