Baked Barbecue Chicken

BBQ chicken to enjoy on South Beach diet.

Directions

  1. Heat oven to 350 °F (175 °C).
  2. Season chicken with salt and pepper on both sides. Heat oil in large non-stick skillet over medium-high heat. Add chicken and cook until browned, about 2 minutes per side.
  3. Place chicken in a single layer, in ovenproof baking dish and spoon BBQ sauce (see other recipe) evenly over top. Bake until chicken is cooked through and sauce is bubbling, about 18-20 minutes.
  4. A staple for those of you that love BBQ like me. It's so good!

Reviews 
The BBQ sauce is bland but I doctored it up with 1/8 tsp liquid smoke & a couple tbsp of honey & it turned out great. The only thing I will try differently next time is that I plan on simmering the sauce for about 20 minutes before spooning it on top of the chicken & baking.

It just wasn't good. The sauce had a "twang".
