it sounds so good...but in phase 1 you can't have salt, cheese, black pepper, or olives out of a can because of the sodium.

I like this; I would, though, add the vinegar and salt at the last minute because it tends to make the mozzarella get a little harder. This would make a great main dish salad with grilled chicken or turkey or lean ham, cubed up.
