Directions

  1. Preheat oven to 350°F.
  2. Melt coconut oil in a large bowl. Whisk in honey and pumpkin, then eggs, yogurt, and vanilla.
  3. Mic dry ingredients in a separate bowl.
  4. Combine the two mixtures with a spatula.
  5. Divide into muffin cups and bake for 15-20 minutes.
  6. Cool the muffin tin on a wire rack for 10 minutes, then remove from tin and allow to cool completely.
