Cabbage Sesame Salad with Chicken
A filling dish with high nutrient content.
Ingredients
Directions
- Whisk 1 tbsp olive oil, 2 tbsps soy sauce, 1 tbsp sesame oil, and 1 tbsp honey into a medium bowl. Add chicken and toss to coat.
- Chop cabbage into wedges, place on one side of sheet pan with green beans, drizzle with remaining olive oil.
- On other side of sheet pan, put chicken in single layer. Broil with rack in middle of oven at 325°F for 17-22 minutes.
- Mix remaining sesame oil, soy sauce, and honey with rice vinegar, garlic, and sriracha, then set aside.
- Remove sheet pan from oven, let chicken rest for 5-10 minutes.
- Chop chicken and cabbage, toss with green beans and pour dressing over. Top with chopped cilantro, green onions, and peanuts.
