Quinoa Salad

Delicious fall dish with high nutritional value.

Ingredients

Directions

  1. Heat oven to 450°F. Slice the potato, green beans, and squash then place on a baking sheet.
  2. Toss with olive oil, garlic, salt, and pepper, then roast for 25 minutes while stirring halfway through.
  3. Chop bacon and egg. Shred kale to bite size.
  4. Mix everything in a bowl.
